In most traditional cultures vegetables are essential foods served together with whole grains and legumes.vegetables are the important source of fibre, fat & antioxidants. They are very high in vitamins & minerals like vit A, B, C, K, potassium, phosphorus, magnesium, calcium, selenium, iron, manganese, copper and zinc. Broccoli, spinach, mustard greens are rated as healthiest superfoods to eat.
A veggie-packed diet promotes overall well-being. They are green because they contain large amount of a green pigment called "CHLOROPHYLL ".Only green plants have the ability to produce their own food by their own. Green plants take in sunlight and transform it into energy. This process is called photosynthesis and chlorophyll plays a vital role in this transformation.
Chlorophyll is a green pigment and it is identical to haemoglobin. Haemoglobin is the molecule that carries oxygen in our blood and our blood is red due to this pigment. The basic difference between these two pigments is, haemoglobin has an iron molecule in its middle while chlorophyll has a magnesium molecule.
Eating foods rich in chlorophyll have many health benefits and it has been proven that chlorophyll kills bacteria. According to the scientists , it kills strep and staph and other harmful bacterias present in the GI tract.
Chlorophyll also reduces the binding of carcinogens to DNA in the liver and other organs. It has the ability to break down calcium oxalate kidney stones for elimination.
Another important function of chlorophyll is to inactive the action of molds. Aflatoxin B which leads to liver cancer is reduced by water soluble form of chlorophyll that is chlorophyllin.
Chlorophyll consumption increases the number of RBCs and therefore increases the oxygen utilization by the body.
All green plants contain chlorophyll but some vegetables contain high amount of total chlorophyll. Studies proved that "spinach" is a great source of chlorophyll. Other green vegetables which are the souces of chlorophyll include 🌱Brussels sprouts, Broccoli, beet greens, green beans, green cabage, kale, green olives, lettuce, alfalfa, green peas etc.
100 gms of spinach contain 2.9 gms of protein.
Those who eat more fruits and vegetables a day are 30% less likely to have a heart stroke or attack and daily intake of fruits and vegetables lower the chances of getting cardiovascular diseases.
